Concrete vats
With the rising importance of whites and rosés at Barón de Ley, we have a dedicated cellar to make and age these wines the traditional way using concrete vats.
Concrete, thanks to its microporosity, allows micro-oxygenation and opens new possibilities to maximise wine's aromatic expression. We have 20 temperature-controlled vinification vats, with 10,900 litres capacity.
We also have four concrete ageing tanks for reds (two with 133,000 and two with 66,000 litres capacity each), which slow down the wine’s evolution and ensure that it is bright and fresh.

In a single harvest, our winemaking team completes an average of twenty different processes. Every morning they will taste and test all the fermenting vats so as to be able to make the right decision for each particular vat, determining fermentation temperatures, type of pumping over and length of maceration.
Our state-of-the-art vinification cellar for reds houses 64 stainless steel vats of 44,200 litres capacity, all equipped individually with the technology required by our winemaking team.

Our legacy from the past
Bodega del Monasterio
We have deep-rooted ties with the Estate’s legacy, a historic regional enclave and unique setting where the Benedictine monks made wine more than 500 years ago.
In our Bodega del Monasterio we employ traditional vinification and ageing techniques, which include six French-oak foudres of 10,000 litre capacity and a bottle cellar. This is an exceptional setup to age some of our iconic wines, such as Finca Monasterio.

As a complement to Rioja’s oak cask-ageing tradition, we keep our wines developing in our 6 million bottle acclimatised cellar, where they are carefully guarded in wrought-iron cages.
During months and years, the wines are slowly rounded and polished, gaining greater complexity until the ideal time for drinking is reached.

A unique space to age wine
Cask-ageing cellar
Cask-ageing in Bordeaux-style oak casks, one of the key pillars in the production of fine Rioja wines, finds a true sanctuary in Barón de Ley's barrel cellar.
It is the second largest in the world with capacity for 30,000 casks selected annually from among the best cooperages.
Barón de Ley uses new oak casks for each vintage to ensure our wines preserve their character.
